My general advice is to make something that you'd find useful (or entertaining). Probably not a lot of help I know, but when you create projects that are useful to you, it puts a bit more incentive in there to do it right, and you've got something you can use in the end as opposed to a project that ends the moment you turn it in. So I guess it comes down to thinking hard about things you can automate to solve a problem, fill a niche, or automate a task.
